Closed cup mushrooms are around twice the size of button mushrooms, with pronounced grey to dark brown gills and a soft skin that is often starting to peel away. They are a staple in almost every professional and domestic kitchen, being used all over the world in curries, stews, omelettes, soups, stir-fries, risottos, raw in salads, cooked in garlic butter, and so much more. Additionally, they can be used as a replacement for any more exotic cultivated mushrooms.
