Description & Flavour

Enoki are like natural spindly and bright microfibres that grow long, thin off-white stems of around 30cm with pinhead sized tiny caps. They are delicate in texture with a squidgy bite, along with a sweet, almost sesame oil taste that makes for a great noodle or pasta alternative. Enoki can be eaten raw or blanched quickly to soften them.
You can also get a shorter version, known as golden Enoki which has a golden brown cap and gold stems, much like the wild Flammunlina velutipes. Golden Enoki, also known as golden needles, smells of slightly over ripe fruit, moist to eat and, when the stems are removed can make a convincing mushroom caviar!
