Flats mushrooms are the largest of the white strain Agaricus bisporus and, of the mushrooms cultivated in substrate, making them the closest in nature to the wild field mushroom. Flats have brown to red-brown or black large gills with firm, thick white to grey caps and can grow to the size of your palm. Their meaty texture makes them a great vegetarian option, either whole with a stuffing or topping, or chunky addition chopped up in a stew or soup.
