Description & Flavour

Mousseron are very delicate with the cap only forming a thin film to cover the top of the gills. The visual appearance of these cute little grassland morsels is what really makes them stand out in the culinary world. They have a very strong smell, similar to that of an intense forest scent or wooden aroma and a nectar-ish taste which makes them great for stocks and soups. They are often paired with chicken in casseroles and sauces, and their richer than usual umami taste makes them a great addition to game or vegetarian dishes.
